Lime White Chocolate Cookies

I’ve gotten a lot of great recipes from you ladies who blog, so I decided to join in with a recipe of my own, since I haven’t had time to write anything else. By the way, I made Laurie’s jello/ice cream dessert and it was oh so good! These cookies aren’t especially easy or hard, but they’re great for the summer!

½ C. Sugar
½ C. Butter, softened
¼ C. Brown Sugar
1 Egg
3 TB frozen limeade concentrate
1 2/3 C. Flour
½ Tsp. Baking soda
½ Tsp. Cream of Tartar
½ Tsp. Salt
6 oz. White Chocolate Chips

Glaze:
1 ¼ C. Powdered sugar
5 Tsp. Frozen limeade concentrate
2 Tsp. Grated lime rind

Combine sugar, butter, brown sugar, egg, and limeade concentrate in a large mixing bowl. Beat together until creamy. In a separate bowl, mixing together flour, baking soda, cream of tarter and salt.

Slowly add into creamed mixture and beat until well mixed. Stir in white chocolate by hand. Drop dough onto greased cookie sheets and bake at 350 degrees for 9-12 min. or until light golden brown. Removed from cookie sheet and cool completely. Combine powdered sugar and enough limeade concentrate for desired icing consistency. Top each cookie with icing and sprinkle with lime rind.

    Sounds delicious and pretty, too.

    I’m really wanting to get out of my cooking and baking rut now. I think I’ll start w/ some of ya’ll’s recipes!
